9 Breakfast Casseroles

I'm a huge fan of casseroles, and when the weather is cool--even more so. The thing is, it wasn't until about a year ago that I discovered breakfast casseroles. Seriously--why did it take me this long?

In any case I've started keeping my eye out for interesting recipes, and today I've compiled a collection of nine that I'd like to share with you!

1. Cinnamon Vanilla Sugar Overnight Baked French Toast

2. Baked Oatmeal Recipe With Strawberries, Banana and Chocolate

3. Weekend Brunch Casserole

4. Bacon, Egg, and Cheese Biscuit Casserole

5. California Breakfast Casserole

6. Egg, Sausage and Hashbrown Casserole

7. Cheesy Potato Bake With Eggs

8. Chef Mickey's Breakfast Pizza
(Can we break a little rule here and call pizza a casserole? Okay--let's do it!)

9. Breakfast Enchiladas With Ham and Peppers

Pssst... I have one more to add to the list. I found it about an hour after I completed this post. But I'm sure you'll forgive me because it's pretty cool: Mini Frittatas/Omelets!

Contentment - A Gem of Great Worth

Drawn from my archives

Contentment requires us to trade personal and immediate gratification for a heightened sense of appreciation, and those who live in a state of contentment possess a gem of great worth.

We’re not used to seeing that in this world, in fact the media conditions us to want more, expect more, and anticipate more. But when circumstances don’t reward us the way we hoped that they would, we patiently wait, dream, and imagine what life “will” be like when we finally reach the island of “more.”

Patience is good, but contentment calls us to take a step further in faith. Contentment doesn't wish that today was tomorrow. Contentment lives in each present moment with an attitude of gratitude. The reward is at hand.

I knew of one husband who wanted to be a carpenter so badly that he set up a table saw in the bedroom of their little apartment and built cabinets. No—he didn't clean up after himself, his wife vacuumed the saw dust and moved his tools off of the bed at night.

30 years later this couple is happily married. He has a big garage for his tools and has built her a beautiful kitchen. The secret to their success is that this woman has always looked past his faults where she sees a kind, generous man and amazing father. She sees the reward in embracing each day.

Be thankful for where you are today in your marriage. Finances might be tight, his habits might grate on your nerves, you might feel out of shape, or you might sense that the romance is gone. All that might very well be true, but there’s a fine gem that’s waiting to be held in the palm of your hand. Hold on to contentment—the reward is at hand.

Rejoice always, pray continually,
give thanks in all circumstances;
for this is God’s will for you in Christ Jesus.
~ 1 Thessalonians 5:16-18

a creative halloween

hhpsdWe really don't celebrate or do much for Halloween but it is becoming a tradition to at least play a little dress up and have some digital fun on the blog! (see last year here and the year before here)

I have been wanting an excuse to dress as my all time favorite artists and celebrity couple- Frida Kahlo and Diego Rivera. And while they never were able to have children I couldn't resist making Lucy into a version of La Calavera Catrina (the Elegant Skull by Jose Guadalupe Posada an etching that was later incorporated into Diego Rivera's painting- Dream of a Sunday Alameda Park). I knew one day all those years of taking art history classes would come in handy!

Wishing you a creative (and safe) Halloween!

5 Good Reasons to Pray for Your Husband

I wandered through the airport like a hungry mouse in search of her cheese, following sign after sign, until finally I arrived at the baggage carousel. It had been four nights and five days--I was ready for "home."

Examining each black suitcase that passed my way, I asked myself the same question I often do, "Darlene, why haven't you tied a pink scarf to the handle?" Every time we travel I ask myself the same question, and every time I get home I forget about the pink scarf that hangs in the closet. It's adorable by the way.

Finally hoisting my bag over the edge I was done. It was time to go. Within the hour I'd embrace four inquisitive children I missed dearly, a pug that would surely lick my face, and a husband that can best be described as home to my heart.

I walked through the doors of the airport where center stage was the orange jeep with it's engine running, waiting for mama to come home. Standing beside the jeep was a servant's heart, clothed in blue jeans with arms outstretched. Beneath the cold October sky I embraced the warm feeling of home.

Stepping into my house I discovered that the past four days had rested in the hands of a capable husband and father. Recent words from author, Ann Voskamp echoed in my ears of how our Savior rose from the table, laid aside his garments to clothe himself as a servant, and washed 120 dirty toes.

The smell of bleach and smiles from faces that had been tenderly cared for told me that Michael was loving his wife as Christ loved the church and gave Himself for it. What more could I ask for, what more could I possibly want?

The real question however is what can I give in return? I can clean up the house today and toss a few loads of laundry in before he gets home, I might even cook his favorite dinner, but a long-lasting gift--and one that should never be taken lightly is the gift of prayer.

Here are 5 reasons why...

1. Most husbands I know have a deep desire to provide for their family. Along with that desire comes the pressure of job security. This is a heavy weight on the shoulders of our men.

2. Being the head of our household Michael takes on the responsibility of also being our spiritual leader. He needs to be equipped with faith.

3. Raising children in a world that threatens to lead them astray he needs wisdom to teach them well and strength to hold them close.

4. Loving his wife as Christ loves the church (Ephesians 5:25) is not only an incredible responsibility, it's also one that requires him to lay down his life at the foot of the cross. Being called to that level of humility is difficult for men and women alike.

5. Living up to the expectation of being a husband can leave men discouraged when they don't measure up to other husbands around them. They need to be encouraged to accept the grace of God, and to forgive themselves when they do it all wrong.

Do you remember to keep him in prayer? May I suggest tying a pink scarf (or whatever color you have) to the oven door as a constant reminder to whisper a prayer here and there? When he asks you what that's all about you can say, "This one one is for you, dear, because we appreciate all that you do."

31 Prayers for Our Husbands

And finally... I'd love to introduce you to a fellow blogger that I met at the conference: Kathi Lipp. She spoke after one of the dinners, and I can't tell you how much this woman made me laugh--she was HA.LARRY.US!

But you know what else? She was real, which is what really drew me to her.

The next day I was chatting with a few ladies when I happened to spot Kathi out of the corner of my eye. She was getting onto an elevator, so I seized the moment, ran to the elevator, and hopped on it too. I'm sure this lady must have thought I was a nut, because I started talking and didn't stop until she gave me two hugs--yeah, two!

I couldn't help but feel a connection with her, and I told her that I thought you might too. She's the author of several books including Praying God's Word for your Husband (the book is sitting beside my bed right now!) and she's got a great blog. You can find her here: KathiLipp.com

creative make believe

IMG_3386Underneath it all- the creative business, the to do lists, the bills, the stress, the goals, the worry about the future, the everyday things...there is imagination, magic and whimsy that keeps my soul afloat.
IMG_3501 In our world, its hard to hold onto that childlike wonder, those simple daydreams and the make believe that was such a big part of childhood. But I have found though art and creativity those daydreams can be brought back to life. With a little imagination, anything it possible.
IMG_3419Imagination has always been a big part of my life (I don't know how you can be an artist without one!) but since becoming a mom, I have been even more inspired to use my imagination to make daydreams, stories and fairy tales into something tangible. I want to be an example to my little Lucy that magic, wonder, joy and whimsy are hiding in the most unexpected places.
